A SWEET FOR THE PICNIC BASKET

When you’re in doubt as to a sweet to pack in the picnic basket, try these almond sandwich fingers. They can be prepared one, or even two, days beforehand; they are satisfying and very popular. Make a pastry of eight ounces selfraising flour, four ounces lard, one dessert-spoonful castor sugar. Roll out very thin and quite even. On this spread about a quarter inch thick paste made of eight ounces

ground almonds, two tablespoonfuls castor sugar and the beaten yolk of one egg. Lightly smear the almond paste with raspberry jam. Cover with a layer of the very thin pastry. Cut the edges straight and evenpressing them together to prevent the mixture escaping. With the knife mark the top in finger-lengths ready for cutting when cooked. Bake in a very hot oven till golden brown.
