g SHORTCAKE 3 ozs flour, 1 oz cornflour, 1 oz * sugar, 2 ozs butter, a teaspoon * 4. baking powder, 1 egg, a pinch * of salt, 2 tablespoons apricot jam, *** 4* 1 tablespoon blanched and chop- 4« ’♦* ped almonds. Sift flour, cornflour, * 4« salt and baking powder. Add 4- * sugar and rub in butter. Mix to * 4« a .stiff paste with beaten egg. 4« Turn on to a floured board. 4- Divide into two. Roll out to a 4« thin strip, spread with jam and * »;« cover with remaining pastry. *i« Brush with egg and sprinkle with 4« nuts. Bake in a moderate oven *:• £ about 30 minutes. §
