WOMEN’S INSTITUTES

WINCHESTER. The annual meeting of the Winchester Women’s Institute was well attended. Mrs J. c. South, president, presided. Mrs D. A. Pearse hon. secretary presented the annual report and balancesheet. The report stated that the monthly meetings held throughout the year had been well attended. Demonstrations had been given by Mrs P. Russell (wool-making) ; Miss M. Fergusson (sea-grass work); Miss M. Barker (smocking) and Mrs Hughes (dressing fowls). An enjoyable time was spent at the gift evening tendered to Miss G. South in honour of her approaching marriage. A euchre social and birthday party were well patronised, visitors being present from many surrounding institutes. At the Christmas party each member’s child received a gift from the well laden Christmas tree. The sales table profits showed an increase of 6/- on the previous year. The credit balance on the year’s activities shows a decrease of profits owing to extra expenditure. The thanks of the institute were due to Messrs L. H. Orbell, A. G. Kimber, J. S. Smith and W. E. Knight for their help at the socials, to Mr Orbell (auditor); to the Timaru newspapers and to all others who had helped. The following officers were elected:— President, Mrs G. Burbrough; vicepresident, Mrs W. E. Knight; secretary and treasurer, Mrs D. A. Pearse, committee, Mesdames T. Lewis, O. S. Priest, T. A. Deßenzy, J. C. South and Miss Joyce Gudsell.

A vote of sympathy was passed to Mrs G. South who recently met with an accident with best wishes for a speedy recovery. Mrs J. Fillmore was elected a new member.

Mrs G. Davey gave a demonstration of knitting and the care of woollen garments. She had on display some beautiful specimens of her work which were much admired. The demonstrator was accorded a vote of thanks. Mrs J. C. South presented Mrs J. A. Paterson (who is leaving the district > with a bouquet and expressed regret at loosing such an enthusiastic membjr and wished her every success in her new home. Mrs Paterson suitably replied. Mrs G. Burbrough presented a bouquet of roses to the retiring president Mrs J. C. South and thanked her for the splendid work she had done during her two years in the chair. A nut loaf competition (Mrs G. Davey, judge) was won by Mrs J. C. South with Mrs Burbrough second. The hostesses were Mesdames C. McClellend, O. S. Priest and Miss J. Gudsell.

If you are one of the former then remember beforehand that when cutting fruit or vegetables or shredding or mashing fish for sandwiches, always use a silver knife. To cut the bread thin and in neat slices use a large sharp knife and dip it constantly in hot water.

A moist sandwich should be eaten first—something of the hors d’oeuvre variety such as tomato slices with chopped egg, beetroot, asparagus tips (which can be bought quite cheaply in tins), sardines, chopped spinach, watercress or mustard and cress. Fried sausage or cooked roe, seasoned to taste, make good fillings for the “meat” course. And, of course, chicken, thinly sliced underdone beef, liver or kidney.

Next something sweet is desirable Sandwiches may be made of chopped apple, dates, chopped cherries (from a tin), or some chopped peanuts, walnuts or raisins. Finally some fresh fruit.
