SOME USEFUL RECIPES. Tomato Sauce. Ingredients required: 71b tomatoes, 41b fine sale, £lb onions, 2oz cloves, 2oz ground ginger, loz garlic, 2 teaspoonful cayenne pepper, Jib sugar, 3 pints of vinegar. Boil three hours, strain r.nu let cool and then bottle. This sauce will keep for years. Mint Sauce. Take one large tablespoon of curranf or rosella jelly, 1 tablespoon orange juice, 2 tablespoons lemon juice, and a grating of lemon rind, 2 tablespoons water, 3 tablespoons minced mint, salt and pepper to taste, a grating of nutmeg, a dusting of allspice, and 2 tablespoons vinegar. Melt the jelly in the water and when it boils add tl e remaining ingredients. Serve either hot or cold. It is delicious. Mandarin Conserve. Boil 6 dozen small mandarins for 30 minutes with 1 cup of salt and sufficient water to float them. Strain off water, put on fresh and boil again for 20 minutes with 1 teaspoon bicarbonate of soda. Remove the fruit, pick over with a fork, then weigh and add 1 cup hot water and lib sugar to every, pound of fruit. Boil for 3 hours or till liquid is of syrup consistency. This conserve is very palatable served with blanc mange or junket. Stewed Kidneys. Take 1 dozen sheep’s kidneys, loz. eschalots or onion (omit if preferred), salt, pepper, a little water,.a sprig of thyme, a little parsley, and grated nutmeg, 1 teaspoon mushroom ketchup, a little flour. Skin and cut kidneys in flour, removing fat. Put in cold water with a little salt and bring to the boil. Remove and wash them well. Brown the onions in some driping, add the kidneys with the other ingredients, and moisten flour with a little water. Simmer for half an hour only. Sponge Sandwich. Ingredients required are: 3 eggs, 1 tablespoonful of butter, \ cupful of sugar 1 cupful of flour, with 1 teaspoon of cream of tartar and one-third teaspoon of soda, and 4 teacup of boiling water. Beat eggs and sugar well together then add flour and other ingredients. Add the butter last, and add it and the hot water. Beat well. Royal Roast. Cut up an stew till tender lib of nice steak, 1 sheep’s kidney, 1 onion, a small carrot, and a stick of celery. Put in a pie-dish with mashed potato on top and bake in a moderate oven.
