lor luncheon---TIMBALES of MUTTON Ingredien ts . 6 ozs'.;cooked mutton 2 ozs. bread crumbs 1 gill stock or water Seasonings 1 teaspoonful Lea & Perrin’s Sauce 2 oz. vermicelli or spaghetti Brown sauce Method: Boil the vermicelli for twenty minutes in salted water. Butter one large or several small timbale moulds and place a layer of vermicelli or spaghetti in the bottom. Mince the meat and mix with the bread crumbs, seasonings, and Lea & Perrins Sauce, stock, and egg. Fill up the moulds with this mixture, cover with greased paper, and steam for half an hour to one hour according to size Serve with brown sauce flavoured with Lea & Perrin’s and garnish.with.green peas.
