EXCELLENT RECIPES.
• Herb Pancakes. —Mix different kinds of herbs,(a teaspoonful of each), a tablespoonful of cooked onion and a tablespoonl'ul of finelyminced lean bacon or ham. Put them in a pan with a piece of butter and cover, steaming gently (ill tender. Make pancakes with the ordinary batter, and s.pread each with a layer of (he herb mixture. Roll up and place neatly side by side and close together in a stewpan with just enough good gravy to keep them from burning. Dot them s'team thus for half an hour. Or the ingredients may be stirred into the batter, made like ordinary pancakes, and served l:ot, with a good gravy sauce, if liked.
Honey Biscuits (no eggs).—2 tablcspconfu's butter, C tablespoonfuls honey. 0 tablespoonl’uls flour, 1 tablespoonl'ul mixed spices, i teaspoonful soda, 1 ta.blespoonful of chopped almonds. Dissolve soda in a little warm water. Mix honey and butter, and warm to melt it; add to this the dry ingredients gradually; then the soda. Roll out thin and cut into shaper. Bake in a slow oven till of a light brown colour.
Potato Bails. —Mashed potatoes, 2 eggs, chopped ham and parsley, butter and seasoning. Mix with beaten eggs, saving the white of one. Season to taste and form into small hulls. Brush over with the white of eggreserved. roll in flour and bake a delicate colour in oven, or fry in deep l'at.
Toasted Cinnamon Sandwiches. — Spread thin slices of white bread with butter, then with a thick layer of light brown sugar and cinnamon mixed together in the proportion ol two teaspoonfuls cinnamon to onehalf cup sugar. Put two slices of bread together to make a sandwich and cut each in throe strips. Toast on each side and serve with afternoon tea or chocolate or for Sundaliight suppers.
