In an address delivered before the Denman branch of tho Primary Producers’ Union of New South Wales, the principal of Hawkesbury Agricul- 1 tural College, Mr. H. W. Potts, stated that pigs multiply more rapidly, mature more quickly on less food, and ; produce more digestible flesh, than ■ any other animal. The increases ! among cattle is estimated at 80 to j 00 per cent, per annum, slieop 100 to ! 150 per cent., and pigs from 1000 to 1800 per cent. It has been amply shown that pigs produce more edible flesh from a given quantity of food 1 than other animals. It requires 131 b ! dry matter in tho form of food (that 1 is, the ordinary ration with the moi- ; sture removed) to secure a gain of lib ; of flesh in cattle; in a sheep it takes ' 81b tb 91b for a gain of 11b of mut- ■' ton, but in tho pig it cnly requires i form 41b to s!b to produce 11b of pork. In killing, sheep dress 55 to 60 per i cent dead weight, cattle 60 to 65 per j cent., and pigs_7s to 80 per cent. The ' pig scores again in that the carcase 1 contains -more edible meat in proportion to bone than that of any other flesh producers. Pigs can be bred, j reared and fattened on smaller areas than other forms of domestic stock. : Bacon is the most compact and suit- j able form in which meat can be stored or transported.
