At the Pure Food Commission leading confectioners gave evidence that if colouring matter was disallowed in cakes it would seriously affect their sale. If they were compelled to use eggs insto-d of margarine in the manufacture of pastry the difference in cost would bo so great that, every pastry cook would have to close down.
