The discoverer of the famous butter culture germ for giving the June flavour to butter, professor U. W. Conn, has been lately (writes the American Agriculturist) travelling in the dairy district of northern Europe. De sajs that the germ butter culture is extensively used, especially in Denmaik, where dairying has reached a high scientific development. In his opinion the excellence and greater reputation of tho famous dairying region sure owing to the high grade o£ the average product. The Danish butter may be relied upon in English markets for uniform excellence Although the best of it is pei haps no better than the best butter from other countiies, there is none below the ktendard of excellence. Professor Conn docs not regard the 030 of the germ of bacterial butter culture as necessary to a high grade flivour.
