Sir, — Some time back Mr Govett, most reluctantly as be tells us, threw a wet blanket on the batter industry, and in last last Saturday's issue he again gives it a dig. I will not attempt to deny that Mr G.s knowledge of the English butter consuming j public is very extensive, but I think our j export trade extends even further. Last year's export was not as successful as we could have wished, owing, I take it, to the extreme heat here often spoiling the butter before it reached the ocean going steamer, and to the exceptionally mild European winter enabling them to keep up the supply of fresh ; though e.ven last year I have known Taranaki butter sold over the counter in England at Is per lb, and in some instances that figure was reached wholesale, but wlfat shall we produce? Beef returns are no better, whilst wool and mutton are not as high as fanners would like to see them. Mr G,'s suggestion is grand, that we should eive up butter-making and take in lodgers. Sir, we have had our millions, and our export trade must pay for them. There are, I take it, but three producers, the mine", the fisherman, and the fanner, the remaining population being but parasites, more or loss useful, doubtless.
