BY THE WAY. It is time the Education authorities woke up to the fact that the curriculum provided for girls’ education is sadly lacking in essentials. One hears men complain, nowadays, that girls are incapable and extravagant houskeeepers, and too often this is really so. I am aware that . cooking is caught at most schools now, hut chat is not enough. It is economical cooking we want —how to make something out of nothing, so to speak. Anyone with ordinary sense can provide an appetising meal when there ave plenty of eggs, butter, etc., but there are times in. the life of the average woman when she is faced with the fact that there .s nothing much in the house, and unexpected visitors are. coming, or perhaps cash may he short. These are the times when a good cook shines. Home science is all very well in its place, but I know of .graduates of that course who are hopelessly at sea when they have to cook for a family, unless there is .plenty of everything that they are used to having in their cooking experiments at the university. It is my opinion that every student in Jhat course, before graduation, should have to cook a' meal out of nothing in particular —a few cold vegetables, s«me parsley, no conveniences, no eggs, no butter, net fruit —could they prepare an appetising meal for tired £ a ms ta n

a strip of the orange rind. Strain it into the cornflour, return to the saucepan, and stir while it cooks gently tor eight minutes. Cool a little, add gradually the strained orange juice and sugar. Stir until smooth. Then turn into a wet mould to set. Decorate with preserved fruits or orange quarters. Ginger Cream. —Two cups crystal sugar, J cup milk, Jlh preserved ; .uger (cut in very small pieces). Put in saucepan and boil for about six minutes, stirring constantly; then pour into greased basin and beat till cold. Set in a damp dish or in a cardboard box lined with wax paper. Cut into squares next day. Australian Delight.—Soak 2oz of gelatine in, a cup of water till quite soft, add 21b of sugar and boil for 20 minutes. Add flavouring, divide into two halves and colour one half pink. Pour into a damped dish, leave for about a day, then cut up md roll in icing sugar.
