SWEETMAKING CORNER

AUSTRIAN MARZIPAN. This is a favourite svzeet with Austrian children, who shape the paste into miniature loaves. Try to do the same, for the “loaves” are amusing to make and good to eat. Roll half a pound of icing sugar till there are no lumps in it and mix it in a basin with a little less than half a pound of ground almonds. Add the strained juice of a lemon and mix again. Whisk an egg till it is as stiff and frothy as possible, and mix this gradually into the other ingredients. Beat the marzipan to a block on a board sifted with a little icing sugar, leave for an hour, then cut it into pieces, shape these into tiny loaves, or whatever .shape you like, and leave again to set. This uncooked marzipan should be eaten within two days of the making.
