The Director of the New Zealand Dairy Research Institute has forwarded a series >f its recent Bulletins. Two of them deal with research into the effect of certain organisms upon acid formation in rnilk and upt>.. the ripening of cheese. Another refers to the selection of starter cultures, and a fourth to the occurrence of bacteriophage in cultures of lactic streptococci, a subject upon which Dr. Whitehead addressed the
recent N.L.A. conference. Another leaflet gives “a simple method for detecting ‘non acid’ milk,” while the fifth of the series deals'with the “spreadabifity of butter,” and another with the disposal of dairy factory by-products and
drainage wastes. It 'will be seen: that the bulletins deal with matters’-qf jprac- • iical issue to the dairy industry, and they are well worthy of study by all concerned in the manufacture of butter and cheese. ’ 1
