STRAWBERRY TOFFEE. This toffee is easy to make, but it must be watched as it is likely to burn. Put three quarters of a pound of white sugar into a saucepan which you have greas°d with very little butter, and add half a pound of strawberry jam—if the strawberries are whole, so much the better. Stir over gentle heat till the sugar has melted, then bring to the boil, and continue boiling till the mixture thickens and becomes a mass. Turn it on to a greased tin, spread it out a little with a wooden spoon, L'u' let it be as rocky as possible. Leave till quite cold, then break into rough pieces.
