TENNIS BUNS. (By ‘Cookie.”) One breakfastcup flour, 3 heaped deseertspoonsful sugar, 1 teaspoon baking powder, 1 egg, 3oz butter, candied peel, milk to mix, essence of lemon to taste. Rub butter into flour, add other dry ingredients, mix well, then add the egg well beaten, and enough milk to make a stiff dough. Place in small lots on a col greased oven shelf. Place a piece of candied peel on top of each. Bake for about 10 minutes in a quick oven. iMERICAN DATE CAKE. Stone and cut up half a pound of datos and put them into a basin with one, and a half teacupsful of flour and the same quantity of brown sugar; add half a Cup of creamed butter, half a cup of milk, two eggs, two teaspoonsful of baking powder, and one of ground sugar. Beat all these things together in the basin-for five minutes. Have ready a shallow cake tin well buttered and floured; turn your mixture into this and bake for about twenty minutes. When the cake is done leave it to cool for a few minutes before turning it out of the tin. Leave again til quite cold then cut it into fingers and sprinkle a little sugar on the top of each.
