EQUITABLE PAYMENT
MILK FOR CHEESEMAKING. INQUIRY STILL" PROCEEDING. Considerable attention has been devoted by the chemical section of the institute to two matters connected with the composition of the milk used for cheese manufacture. When it was decided some few years ago to standardise milk by removing a proportion of the fat from the higher testing supplies, accurate methods for carrying through the process and for subsequently checking the composition of the cheese, were worked out at the institute. More recently an examination has been made of possible alternative methods of payment for cheese milk which would give a more equitable distribution of the profits of a co-operative cheese factory. Concentration of attention on butter-fat production seems to some extent to have prejudiced the production of milk from a cheeseproducing point of view; and the adoption of a system of payment which gives due weight to the other cheese constituents would seem to be necessary’’ if the position is to be safeguarded. The indications are that it will be possible to use the Walker test for casein in conjunction with the system of payment on “cheese test,” which was suggested by Mr. P. O. Veale in his report to the Rahotu Dairy Company. The results still need verification for the early part of the season.
