“During the War period—l9l4-18—little of major importance occurred and little need be said concerning it,” states the director of the Dairy Division, Mr. W. M. Singleton. “It was largely a time of routine and concentration on rapidly increasing output and was principally characterised by hard work, and in the later stages of the Great War, labour problems. Something which may not be generally known is that the Government foresaw a possibility of our rennet supply being cut off, and to safeguard the position the Division imported and held in store against emergency several hundred pounds worth of pepsin.”
