FOR YOUR SUMMER TABLE
SOME USEFUL RECIPES. Warm, not to mention hot,- weather means that you are on the look-out for tempting, cooling dishes that can be prepared in the minimum of time. Naturally, you want to exercise just as much care in planning your menus as you do in colder weather—but you wish to take advantage of the many summer fruits and vegetables and to reduce the hours you spend in the kitchen. Here are suggestions for foods, ranging all the way from a delectable summer soup to an enjoyable, but not too rich dessert. LIVER AND MUSHROOMS. Saute liver until brown in bacon fat, add sliced mushrooms, cover and cook slowly until tender. Remove to platter and pour over cream gravy made from fat in the pan. PLANKED GROUND BEEF. One pound well-ground beef chuck, one small onion minced fine, one cup cooked breakfast cereal, two teaspoons Worcestershire sauce, half teaspoon salt, half cup stock or milk. Mix all ingredients, then mold mixture in a large flat cake to fit centre of plank. Dot with a few small bits of butter and set under broiler frame. Gook for about 20 minutes, taking care that the surface does not brown too much, ,
