It was while he was factory manager at Mangatoki, states Mr. A. McWilliam, over 30 years ago that there came the first glimmering knowledge of bacteria and their effect upon dairy products. Bacteria were then usually referred to as “microbes,” and a discussion in regard to them furnished the basis of a memorable speech by an Irish settler, who in insistent and almost impassioned tones demanded at a public meeting further information about “these microbees” as he called them.
