DAIRY BY-PRODUCTS
STATES’ EFFORTS TO FOSTER. ■ Twenty-two years ago the desirability of utilising the by-products of the dairy factory was much discussed and the director of the Dairy Division, Mr. W. M. Singleton, reports that "in 1912 the Dairy Division sent Mr. J. Pedersen to Europe to investigate the casein industry and secure all available information in connection with its manufacture and market prospects. After his return arrangements were made to give instruction in the making of casein and to grade all the exports, i “In 1918 Mr. W. Dempster, dairy instructor, was sent to the United States and England to obtain the latest informaion relating to the manufacture of dried milk, milk sugar, and allied products, and these industries have been considerably assisted as the result of his experience.”
