How the consumption of butter has increased in late years at the expense of margarine was shown in a speech by the chairman of one of the great margarine producing companies, who said the yearly consumption of butter per head of the population had steadily risen, from 16.71 b. in 1928 to 23.91 b. in 1933, while irj. the same period the consumption of margarine decreased from 13.21 b. to 8.41 b.
