SMALL SAVOURY SOUFFLES. Ingredients: 41b. minced meat; olive oil for frying; one onion; salt and pepper; capers; lemon juice; 2oz. creamcheese; two egg whites; stoned olives; slices of lemon. Fry the minced meat and sliced onion in the oil for about half-an-hour, and drain off most of the fat. Add salt, pepper, chopped capers and lemon juice to the meat. Beat the cream-cheese smooth, and add this. Whip the egg-, whites until stiff and fold them in lightly. Turn the mixture into small fireproof dishes. Halve the olives and put a few halves on each souffle. Bake in a moderate oven for about three-quar-ters of an hour. Serve hot with slices of lemon and neat squares of buttered toast.
