SMALL APPLE CAKES.

Ingredients: For the pastry.—Jib. self-raising flour; 1 egg; 3 tablespoonsful sugar; 4 tablespoonsful honey; vanilla to taste; olive oil. For the filling.—4 apples; sugar to taste; vanilla; Jib. shelled. Brazil nuts; 2 egg whites. Sieve flour into a bowl. Beat the egg and sugar together; add the softened honey and vanilla, and pour this mixture into a well in centre of flour, adding- a little olive oil. Beat the wet ingredients, then beat in the flour gradually, adding more olive "oil if required to form a very moist paste. Have apples ready. Peel, quarter and core them, and stew them with sugar and vanilla. Drain well, and mash as smooth as possible without making them liquid. Add the chopped Brazil nuts, and divide the puree into two portions. Beat the egg whites to a very stiff froth and add this to one of the portions. Have a good number of baking paper cases. Put a thin layer of pastry in each, then a layer of apple without eggs and another layer of pastry, and lastly one of apple with eggs. Bake in a oven.
