CHOCOLATE TOFFEE. Mix three tablespoonsful of unsweetened cocoa with one pound of soft brown sugar; turn into a saucepan, and add two tablespoonsful of milk and a piece of butter the size of a small egg. Allow the sugar to dissolve slowly; then, stirring gently, bring the mixture to boiling point. Cook till a little dropped into cold water makes a fairly hard ball; then pour the toffee into a well-buttered tin.

When it is setting, but before it is hard, mark into squares which will •break when cold.
