MOCK CRAB SANDWICHES
Hard* boil two eggs, shell and mash them finely; add three tablespoonsfull of essence of anchovy, and mix well. Spread this mixture on thin slices of brown bread and butter, season with a squeeze of lemon juice, and a dash of paprika. When made into thin sandwiches the flavour is hardly distinguishable from that of dressed crab. The quantity may be increased, of course, accordin" to the number of sandwiches required.
