OUR BUTTER AND CHEESE
INTERVIEW WITH ENGLISH BUYER. Mosterton. July 23. Mr. W. F. Crichton. cx-hon. Bee. of the Manchester Butter Conference, who is visiting New Zealand on behalf of Weddcl and Co.. Ltd., London, was interviewed by the Wairarapa Daily Times. He said that large number* of buyers all over the United Kingdom were now taking up our produce, who formerly never handled it. Some admitted it was as good as that of anv country in the world. It was a mistake to suppose that all our dairy produce was sold in London. Oh the contrary, it was sold in a hundred places all over the Kingdom, and in Germany and other Continental countries the trade was expanding very rapidly, and called for fresh methods of distribution. The quality of our butter was not below Danish, but the latter was obtainable all the year round. Mr. Crichton advocates winter dairying in New Zealand so as to keep London supplied constantly. He. also says that the Government should advertise our products, by means of popular lantern lectures on farming in ' New Zealand, also showing the history' of the butter and cheese from the cow to the British table, throughout the United Kingdom. Buyers at H.omo were thoroughly, satisfied with the Government supervision of the produce at this end, but too much care could not be evereised, as excess of moisture or foreign flavor in an odd shipment re-awakens the old prejudice against imported frozen produce. Mr. Crichton strongly favors establishing a new superfine grade of butter which will raise the standard of all grades. Cow-testing is also very important. Kcfering to cheese, Mr. Crichton said that the quality cannot be. improved. Our cheese, in many cases, is better than Canadian.
