BAKERS' HOURS.
New bread, though not strictly as Wholesome as the older loaf, is decidedly more popular, but with the trial in Australia of the system of daybaking, the public there will have to put up with the slightly-stale article. In New Zealand the popular taste is not likely to be disregarded. A leading master baker states that a majority of the proprietors in Wellington are in favour of day-baking, but there is no promise of any alteration of the present system, under which the men start at 4 a.m. and continue till 12.30 p.m. The employees, it is said, are not strongly in favour of day-baking, because it involves working during the time of greatest heat. The employer in question said he is of tho opinion that the new scheme in Australia will not prove satisfactory for ,the same reason, and that s; demand will soon be made for a return to the old conditions. The men on this side, he says, will probably not ask for the adoption of the new idea until they have seen that it has worked out 'sxiccessfully in Australia,—'"'Times."
