It is with much pleasure that we take vi this opportunity of wishing all the readers of our Notes the season's compliments. We are glad to report that we have received some hundreds of absolutely unsolicited letters of appreciation from householders resident in country districts regarding the good results they are regularly obtaining from the use of our Compressed Yeast in their bread making. Then, in regard to CITY HQUSE--1 HOLDEES, we desire to express our appreciation of the increasing number WHO NOW TAKE THEIR BREAD FROM BAKERS WHO USE COMPRESSED YEAST. We have explained in these columns at various times that IN THE CITIES WE DESIRE ONLY TO SUPPLY THE BAKER WITH THE YEAST, as it is his special business and trade to make Bread. And there are so many really firstclass tradesmen in City and District, who are baking daily the most delicious Bread with the aid of Compressed Yeast, that all concerned will readily admit the big improvement that has taken place in the QLiiality of our daily bread since Compressed Yeast was first introduced. Since our announcement last week of the list of Bakers who are regular users of our Yeast, we have received several genuine inquiries from local bakers who have a desire to adopt the more modem method of fermenting their doughs. In this connection we would again desire, as we have always endeavoured to do, to make it quite clear that good Bread was made long before Compressed Yeast was introduced, but we are now concerned with "Baking BETTER Bread"—and doing it in an easier, in a scientific and more certain way than has hitherto been possible. And the proof, we repeat, taat Bread made with Compressed Yeast is better than the old method, however careful the tradesmen might be, is found in the fact that THE PUBLIC DEMAND FOR COMPRESSED YEAST BREAD IS DAILY GROWING, and those Bakers who have adopted it have considerably increased their sales. Compressed Yeast Bread has a flavour of its own which is at once distinct and appetising, and those of our readers who have not yet tried Compressed Yeast Bread should at once consiut their baker regarding the same, and start the New Year according to our suggestion. iSH Cr.
