JERUSALEM ARTICHOKES

A HEALTHFUL VEGETABLE The artichoke is one of the easiest vegetables to grow. At the same time, the foliage is very tall, and they are very handy to hide up any ugly corners in the garden. They produce a large crop of tubers at a time when vegetables are scarce. If lifted and used as required, the flavour is not impaired. Artichokes require a light soil, but if the ground is heavy, it can be lightened by using any stable manure or garden refuse. If the ground is heavy, they will grow satisfactorily, but the tubers are more irregular and knotty. When planting, set the tubers four j to Six inches deep and 18in apart. 1 August is a good month for this work. 1 They make their growth in summer. : and when full grown the flowers, which are borne profusely, resemble ! the sunflower (in fact, they are a species of sunflower). Once planted, i artichokes generally take possession! I as when digging, pieces are invariably left in the ground, and these will grow and furnish the next season’s crop. The time to dig is when the foliage j turns brown; then dig as required The artichoke makes an excellent soup, and is a very nutritive vegetable, havI ing a pleasant flavour, and is gener- | ally served with white sauce. A j pound or two of tubers planted as directed will provide a crop large j enough for the average household.
