WHITE BREAD OR BROWN?
FOOD CONTROVERSY LIKELY TO BE REVIVED VERDICT OF TWO DOCTORS (Australian and N.Z. Press Association) ( Unitett Service t LONDON, Tuesday. The controversy about the respective merits o£ white and brown bread ;s likely to be revived by a report just issued by the Medical Research Counc‘i- This contains details o£ the results of investigations made by Drs A. McCance and R. D. Laurence. o£ Ring’s College Hospital. The doctors say undoubedly bread made from white flour is a better source of energy for it contains a higher percentage of starch than brown bread, in which some starch is replaced by cell membranes of a very indigestible type. Brown bread also contains proteins derived from bran which do not rank ‘u nutritional value with animal and Other vegetable proteins. The laxative value of wholemeal bread is no KSpater, tjjey say, than that of any Ptfcer iaxative.
