I APRICOT CHUTNEY g WO pounds apricots, lib g / sugar, Ilb raisins, Zos dried nj 1 chillies, \oz green ginger, nj los garlic , loz preserved ginger, gj l*oz mustard seed ( bruised), one 'quart vinegar. Put apricots in a little wafer and boil until tender; jg add sugar , boil 20 minutes and Lg leave to get cold. Stone and chop Uj the raisins , pound the ginger , g garlic and chillies ( separately ) Lrj into a paste with a little vinegar, Qj mix all together and boil for 40 j}{ minutes, or until a spoon will |T stick to it.
