SAFEGUARDING MILK
CARE IN HOT WEATHER It is very difficult to keep milk sweet in hot weather, unless one has a refrigerator. The great dread is, of course, where there are children, infantile cholera or summer diarrhoea. If the milk is bought from a reputable dairy and is put straight into clean jugs there, is little fear of infection. It is fiies, bluebottles and dirt which may bring the germs into the house. Never leave the milk jug out to be filled. Dust blows along, stray dogs come and have a lick at the jug after having picked up unnameable filth on the road, or the milkman himself may not be above reproach, and may hold the jug by the lip instead of the handle. Having got the milk direct from the milkman into a clean jug, stand it immediately in a basin of cold water and put muslin over the jug, so that the ends of it are in the water. The evaporation of the water will keep the milk wonderfully cool, and the muslin will keep out all flies and dust. Thunder will often affect quite clean milk, causing it to curdle, but there is no need to waste it, as it will make excellent cakes, scones and cheeses.
