Cheese Turnovers An excellent way of using up dry pieces of cheese is as follows: Make an ordinary lard or dripping crust, roll it out thin and stamp into rounds. Cut some cheese into thin slices and place on each of the rounds., Add a little mustard, pepper and salt and a few drops of vinegar. Sprinkle with a little milk. Fold the crust over as though for jam turnovers, and bake in a quick oven." Wafer Puddings Take two eggs, and the weight of one in flour and in butter, half a pint of milk and a dessertspoonful of castor sugar. Cream the butter, add the sugar, flour, eggs and milk, and beat the mixture well, adding a pinch of salt. Pour the mixture into some wellbuttered saucers and bake 15 to 20 minutes. Serve in pairs with hot jam between.
