LEANER BACONER PIGS
PREFERENCE IN SCOTLAND According to Mr R. P. Allen, Chief Commonwealth Veterinarian Officer in London, bacon curers in Great Britain are showing a decided preference for the leaner bacon carcasses produced by New Zealand, and he urges prompt action by Australian bacon producers to meet overseas requirements.
He says that Scottish curers, in particular, have been complaining of the over-fat condition of Australian baconers. They want a leaner and lighter pig of between 1001 b and 1201 b weight. The tendency in north-eastern England is also for a lighter carcass, he says, although at present weights can be 201 b or 301 b a carcass heavier than those desired in Scotland.
