WHITEBAIT FRITTERS 1 cup flour. § cup milk. 1 egg. | pint whitebait. J teaspoon salt. 1 tablespoon melted butter. 2 teaspoons baking powder. Wash whitebait and drain well. Sift dry ingredients into a basin. Beat egg and milk and melted butter and add to hole in centre of dry ingredients. Stir in ever-widening circles. Add the whitebait to the mixture. Drop in tablespoonsful into deep fat at 365 degrees F. and cook till golden brown. Drain well and serve piping hot with sliced lemon. SARAH.
