Storing Herbs.

There are many different methods of drying herbs for winter us- in coo-ing, but one of the best is this one. Gather the herbs on a dry day, pluck the leaves from the stems, wash them and dry them by spreading them on a clea'i towel and folding it over. Next scatter the leaves over a large dish in a thin layer and dry slowly in cool oven. When the leaves are so dry that they are brittle, rub them so that they make a powder and store in tightly-cor ed jars. They will keep their green co T our as well as their flavour.
