FRIED CHICKEN Cut the chicken into pieces for serving. Plunge in cold water, drain, but do not wipe. Sprinkle with salt and pepper and coat thickly with flour, leaving as much flour adhering to the chicken as possible. Fry out fat salt pork dr bacon, or use dripping cut into pieces.
