TODAY’S RECIPE
APPLE CUP CUSTARD 4 tart apples. 1 tablespoon butter. 4 tablespoons sugar. 4 eggs separated. 1 cup milk. 4 tablespoons powdered sugar.
Wash, quarter and core apples. Steam till tender. Strain. Add butter and sugar, stirring until all the sugar is dissolved. Then add beaten egg yolks and milk. Turn into buttered cups, set into pan of hot water, and bake in a moderate oven till set. When cooked, beat egg whites stiff and add powdered sugar. Pile meringue on custard, dust lightly with powdered sugar and brown in a moderate oven. Serve cold. SARAH.
