FOOD QUANTITIES
“How much food shall I want?” is a common question when contemplating an entertainment. To solve this question the following hints on quantities will be valuable: —
Half a pound of butter is sufficient to spread a 21b loaf of bread for sandwiches. One quart of ice-cream will be sufficient for 18 small servings. Half a pound of meat, cut thin, will provide fillings for sandwiches for a 21b loaf of bread. , One-quarter pound coffee, with two gallons of water is sufficient for 50 people. One gallon of hot milk will be adequate for the milk requirements
I for the same number, since many people prefer black coffee. One 21b sandwich loaf will cut into 36 slices, making 18 rounds of sandwiches, which can be cut into 72 small triangles, or squares. Six eggs, boiled, shelled and made into a paste with pepper, salt and a dab of butter, will provide sufficient filling for sandwiches cut from a 21b loaf. One quart of jelly is sufficient for 12 small servings.
