TODAY’S RECIPE
RAISIN PIE 2 cups seedless raisins. 14 cups boiling water. 1 cup (4oz) sugar. 2 tablespoons cornflour. 3 tablespoons lemon juice. 1 tablespoon lemon rind. 1 tablespoon butter. Cook raisins in boiling water for five minutes. Sift sugar with cornflour and mix to a smooth paste with a very little water. Pour into raisins and water and boil for two minutes, stirring constantly. Remove from fire when thick. Add butter, lemon rind and lemon juice. Cool. Pile into pie plate lined with plain or flaky pastry. Cover with top crust, and bake in a hot oven 450 deg. F.—soodep. F. till the crust is golden brown. SARAH.
