The grading and marketing regulations for Stilton, Cheshire and Cheddar cheese resulted in the examination of about 223 samples by the laboratory. Even the advent of “national mark” watercress brought extra work, because water from the beds has had to be examined chemically and bacteriologically. The total number of samples examined last year amounted to 546,279, an increase of 23,491.
