CAKES AND COOKIES Chocolate Cake. Ingredients.—Jib. flour, ; ]lb. butter, Jib. castor sugar, 2 eggs, 3oz. grated chocolate, milk, 1 teaspoonful baking powder. Cream the sugar with the butter, and add the yolks of the eggs. Then add the chocolate dissolved in a little warm milk. Stir in the flour by degrees until well mixed, then fold in lightly the stiffly whisked egg whites and the baking powder. This cake will take about an hour in a moderate oven. Orange Cake. First clarify the butter and let it set slightly, when you must add the sugar and beat until light and creamy. Then beat in the egg yolks, add the almonds with the lemon juice and rind, and finally the two flours sieved together. Now whisk the three whites of egg very stiffly and add them very lightly indeed. Pour the mixture into a flat, wellbuttered cake tin which has been lightly lined with cake-crumbs and bake in a moderate oven for about 35 to 40 minutes. Apple Cheesecakes. Ingredients.—Jib. apples; 1 egg; loz. castor sugar; loz. butter; nearly loz. stale cake crumbs; J lemon; cloves; cinnamon; pastry: puff or flakey. Cut the apples, unpeeled and uncored, into small pieces and stew them to a pulp with sugar, lemon-rind, cloves, a small piece of stick cinnamon, and a little water. Rub through a hair sieve and put back into the saucepan, where you must add the butter in little pieces. Heat up again, stirring, then off the fire and cool, put in the crumbs and the egg well beaten. Make some patties with your pastry, fill them three-parts full with the cold mixture and bake them in a hot oven for a quarter - of an hour or a minute or two longer. Dredge with castor sugar when done. These cakes may be eaten hot as a sweet. Cookies. Ingredients.—Coz. flour; 4oz. butter; 4oz. castor sugar; 2 eggs; a teaspoonful vanilla essence. Cream the butter, then add the sugar and cream again. Beat in the eggs (well whisked) by degrees and flavour with the essence and add the flour. Take teaspoonfuls of the mixture and drop them on a greased baking tin two inches apart. Spread them out thinly with a palette knife dipped in cold water. Decorate with almond, sultana and candied peel and bake in a moderate oven for about a quarter of an hour.
