Eggless Cake. One lb flour, Jib butter or margarine, Jib brown sugar, 6oz dates or Jib sultanas or muscatel raisins, two tablespoonfuls golden syrup, lj teaspoonfuls carbonate of soda, dissolve in half pint of warm sour milk.

Beat butter and sugar together, add dry ingredients. Mix with milk. Bake two hours in moderate oven. Have cake tin well greased before mixing cake. Orange Layer Cake.

Cream 2 cups castor sugar and 1 cup butter. Stir in 2 cups flour, sifted with 2 teaspoons baking powder, the grated rind of 1 orange, J cup orange juice, and the beaten yolks of 5 eggs, then fold in the frothed whites of 4 eggs. If you want a cheaper recipe beat 1 cup castor sugar into 2 eggs. Stir in 2 tablespoons melted butter, J cup milk, 1J cups flour, sifted with 2 teaspoons baking powder, 1 tablespoon orange juice, and 1 teaspoon grated orange rind. Bake either mixture in a buttered layer cake tin, and when cold split and fill with orange cream, or bake in 2 tins and put layers together with the cream.

Orange Cream. Put 1 tablespoon lemon juice and the juice of 1 orange into a cup. Add the rind of J orange and fill cup up with hot water. Bring to the boil in a saucepan, and 1 tablespoon cornflour, dissolved with a little cold water, and cook for a few moments, stirring constantly. Add an egg yolk beaten with 2 teaspoons castor sugar, and a teaspoon butter. Stir till butter is dissolved, and cool before using. I always cook this mixture in the top of a double saucepan with water boiling in the bottom pan.

Cheese Delight Savouries. Grease some patty pans and line them with pastry. Melt Joz butter in a sauceoan, stir in |oz of cornflour, blend well, then add 1 gill milk and stir till the mixture thickens. Remove from stove, add the yolks of 2 eggs (singly) and stir well; then add 2oz grated cheese, a little salt, pepper and cayenne, and, lastly, the beaten egg whites.

Fill the tins half full and bake 15 minutes in a quick oven. Serve at once.
