MILK AND THE. COLOUR SYSTEM. When the colour system becomes I generally known, and accredited as a scientific, basis on which to act, it j will be possible to impart to milk i many, qualities which it does not pos- [ sess in its raw state, especially where the treatment of patients demands difference in the action of foods. ■ Dr. Edward Plantet has been making further experiments in this direction (says "The Dairy”), and announces some interesting experiments concerning the influence of red light on milk, and says that red bottles solve the milk preservation problem, and will keep milk fresh for ten hours. That light is a detriment to the preserving of milk is well known, but which of the rays really did the mischief was not known until Dr. Plantet experimented. He found, after testing all colours, that red rays were beneficial, but that those toward the violet side of the spectrum caused the milk to “turn.”

Dr. Plantet proved his experiment by placing sterilised milk and unsterilised milk in uncoloured bottles in the light for a full day. They were both spoiled and both equally bad. At the same time both kinds of milk were also placed in red glass bottles, and at the end of the day were found to be fresh, even, the unsterilised milk being good for many hours.
