WASHING BUTTER.

At the invitation of the (ilobo Trailing Company (snys the Daily Mail) a party of gentlemeu interested in the butter trade, and analytical experts, travelled from London to Dublin to witness at the Irish Aerated Butter Company's wurks, Klnnchardstuwn, the process of improving low grade butters by special treatment of cleansing. The patentees of the system by which butter is restored to purity and sweetness: are the Globe Trading Company, and their method of butter washing is simplicity itself when you quite undci stand how it is done. First, the impure butter is melted in a buge water-jacket, lined tank, and from a spray above water of 120deg temperature is turned upon the butter oil. The effect of this is to remove all the impurities. Then the melted butter is drawn oil', placed in circular tanks, and by a process of violent agitation, mixed with buttermilk of a certain grade. It pusses through other circular reservoirs until finally the interesting process of aeration takes place. By meaii'j " of a powerful exhaust, system, cold and hot air are drawn upward through the liquid butter with such tremendous foiee that the stuff bubbles and boils as if over a fieice fire. When the operation is complete thcio is rejuvenated butter with the con at granular texture restored.
