Secrets of the Meat Trade.

A few months ago a statement was qnoted in the papers that a London firm of frozen meat sal' smen had paid a solatium of L7OO rather than produce their books ia Court in an action brought against them in connection with transactions in frozen meat. The London Meat Trades Journal states that after this case was settled, another was brought against the same firm of salesmen. " The usual lc^al delays occurred, tho defendants paying tho expenses all the time, but this casg has also been withdrawn from ihe lists, and we understand that the defendants have paid L3OOO in settlement, in addition to the costs. Still, the firm are allowed by the Corporation's Market Committee, who know tho facts, to occupy their stall (which is in a prominent position in the Central Meat Market). It is not likely that any firm would pay LJ.0,000 midheavy legal costn if they had a fjood defence to offer for the illicit trading alleged against them. We may again explain that meat importers, whether from the provinces or abroad, are entirely in the hands of these market salesmen. Salesmen may pay the owners the exact amount which they receive, or, if they are dishonest, may withold a percentage iv addition to their commission, and as they work in rings the dishonesty is difficult to discover. We understand that another action is pending against the same firm who have paid the LIO,OOO, and that in this case a much heavier claim is made against them. After the first case, which, as above explained, never went to trial, the firm d'-troyed or lost their books. All these facts which we have stated are in possession of the Market Committee of the City Corporation."
