DAIRYING RESEARCH.

THE HAWERA LABORATORY. WANGANUI, August 2. The science of dairying is producing beneficial results, and the work at the laboratory at Hawera is greatly appreciated by all daiiy factories along the West Coast. Ln the course of a very interesting report to the annual meeting of the Federation of Taranaki Dairy Companies, the scientist, Mr P. O. Veale, said:—• “The grand total of samples of all kinds received at the laboratory for analysis or bacteriological examination during the season, amounted to 6238, and these consisted of every variety of dairy material, produce, or requisites. These figures bear eloquest testimony to the use which has been made of the laboratory by the managers of the federated factories, and prove that it has been of real service to the industry. Over 200 pure cultures of lactic acid bacteria for cheesemaking were supplied during the season, and there is evidence to-show that this service has been of material benefit to the companies, not only because of the uniformity and guaranteed purity of the cultures themselves, but also because of the convenience which the service has been to the factory managers. The cultures have been used by a number of managers for the making of show cheese, and many notable successes have been secured. It is specially worthy of mention that the New Zealand cheese championship at the Auckland Winter Show has been won for the last two years by managers belonging to the federation, using cultures supplied by the laboratory.”
