NEW MEAT FREEZING PROCESS
There has just arrived in this country (writes our London correspondent) the owner of a patent system of meat freezing for which great things are claimed. This is Mr J. Douglas, of Pretoria, South Africa, who is interested in the Shaw freezing and defrosting process. Two consignments of meat from South Africa to London, one last spring, and the other a month or so ago, gave great promise for the system, as the condition of the meat on arrival supported the assertion that beef frozen by this process thaws out with none of the usual drip and with the flesh left in the same state as freshly killed meat. _ The principle of the system is the preliminary submission of the meat in the chamber in which it is to be frozen to a very rapid drying opration by means of a battery which neally creates a partial vacuum and clears off all the vapour generally met with in a "meat freezing room. Great interest is being
taken in the system, as, if justified, it would bid fair to help the Antipodes in exporting meat acceptable to the Oontlnental taste in Europe. Mr Douglas is the chairman of the Central Cold Storage Co. in Pretoria.
