MASTER BAKERS.
THIRD ANNUAL EXHIBITION
CHRISTCHURCH, January 18. The third annual exhibition in connection with the conference of the New Zealand Master Bakers' Association opened to-day, 156 bakers and pastrycooks from all parte of the dominion being represented by 995 exhibits.
In opening the exhibition, the Hon. Mr Russell said it was fitting it should be held in Ohristchurch, as _ Canterbury was the granary of the dominion, and the centre of the flour-milling trade. He hoped it would not bo necessary in future to import wheat and flour from other countries. In the bread section, .T. A. M'Lrennan (Auckland) won in the class for upright tin loaf "from 90 others. -Most of the other awards in the section went to Christohurch and other Canterbury bakers, though James Thompson (Dunedin) was third in the barracouta loaf, moulded, and W. H. KelJs (Feildinsr) first in barracouta tin loaf. J. A. M'Lennan (Auckland) won the challenge shield, value 15gs, for the best loaf bread made with compressed yeast. In the championship the judges were unable to separate F. "Wright and P. Dunn, bakers employed by 0. E. Boon (Christehurch). Wright was last year's winner in the pastry section. J. H. Murdoch and B. Wilson (bolh of Napierl wei'o first and second respectively for the bun loaf, while "Wilson was awarded first prize for a display of goods baked on a hot plate. Murdoch was second in the sponge sandwich, and J. Thorn (Napier) first in sponge roll and second in plain cakes. J. H. Murdoch was fust in decorated birthday cake and second in shortbread. In the apprentices' class, A. Christieson (Napier) was second in the display of small goods. The competition was strong in each section.
