HOME INTERESTS.

WASSAIL BOWL,

Crumble down in a deep glass dish a sponge cake or a pound of macaroons. Pour sufficient raisin wine over to saturate thoroughly. Sweeten if necessary with powdered sugar, and pour a rich well-seasoned custard over all. Stick with sliced blanched almonds. Decorate the stand on which the dish is placed with ribbons, and crown the whole wiih a garland of ivy.

APPLE CREAM.

Peel, core, and slice ljlb of cooking apples. Put them in a saucepan, with half a gill of water, two tablespoonfuls of castor sugar, and the grated rind of one lemon. Stew till quite tender, then rub through a sieve, and beat -well with an egg whisk. Whip half a pint of cream till quite stiff, stir the apples into it, heap it up on a glass dish, and sprinkle with chopped almonds.

PARSLEY AND BUTTER SAUCE

Break 2oz of butter into small bits, and mix smoothly with one teaaponful of flour. Put this into a lined saucepan with one-third pint of milk, salt and white pepper to taste, and stir it over the fire for a minute or two. Should the butter oil, stirring to the left instead of to the right for a few minutes will put this to rights. Wa3h a bunch of parsley, boil it in water for five minutes, mince it very finely, put it in a tureen, pour the melted butter over, and stir lightly till the ingredients are thoroughly mixed.

CREAM COOKIES

Two cupfuls sugar, one cupful butter, one cupful sour cream, two eggs, one teaspoonful soda, one teaspoonful lemon ; mix soft as you can ; roll.

STEWED SHEEP TONGUES,

Boil the tongues, skin and sprinkle them with flour, pepper, and salt ; put into a stewpan, with a small onion sliced and a gill of stock; let it simmer five minutes; serve, and garnish with sippets of toast.

SAVOURY RICE.

Ingredients : Half an ounce of rice, half a pint of stosk, a tomato, one onion, half an ounce of butter, pepper, salt, a little dripping. Wash the rice in cold, -water two or three times, and then put it in a jar with the stock, the onion sliced and fried in dripping. Add the sliced tomato, pepper and salt. Put a cover on the jar, and place in the oven. When all is hot add the butter, and let the rice cook slowly for two hours, or until the liquor is almost absorbed and the rice quite done. Do not stir the rice, but shake the jar occasionally. Serve very hot, with extra seasoning if necessary.

ORANGE BLANC MANGE

Two tablespoonfuls of cornflour, half a pint of cold water, 6oz of sugar, strained juice of six oranges, and one lemon. Blend the cornflour smoothly with the water, wipe the lemon, and rub the yellow rind with the sugar, strain the juice of oranges and lemon, and put all together into a saucepan and boil, stirring well for seven or eight minutes. Pour into a mould, previously wet with cold water, and turn out when set.

A NICE WAY TO COOK CARROTS

Carrots being one of the most -wholesome vegetables that we have, they cannot be placed too often upon the table, and cooked in the manner which I will describe they form a very delicious dish. Scrape, slice, and parboil as many as you will require, and then drain as dry as possible. Put them back into the stewpan with a large lump of butter, a dash of pepper and salt, and a little minced parsley. Cover closely, and stand the stewpan at the side of the fire, where the contents can only simmer in the butter, not boil.

PRETTY DISH FOR PARTY

Put the -whites of three eggs into a basin with Jib of raspberry jam and six drops of essence of lemon. Whisk all well together uritil it forms a solid froth.
